* 'Special Occasion' YOGHURT Fruit AND Nut LOAF !!

* SERVES: Eight (8).
* PREPARATION: Ten (10) minutes.
* COOK: 1-1/2 hours.

INGREDIENTS:

100g Butter or cooking
(preferably Sunflower) margarine.
3/4 cup Raw or Caster sugar.
2 eggs (lightly beaten).
2 cups Wholemeal self-raising flour.
1 cup LIGHT Greek-style natural yoghurt.
140g. tub Apple and Pear puree.
2/3 cup finely chopped soft and juicy dried Apricots.
2/3 cup Sultanas.
2/3 cup finely chopped Walnuts.

METHOD:

1. Grease a 14cm. x 24cm. large loaf pan. Line base and sides with baking paper.

2. Place spread and sugar in a small bowl of an electric mixer.

Beat until changed in colour. Beat in eggs, one at a time, until combined.
Add flour, yoghurt and puree. Beat on low speed until just combined.
Transfer to a large bowl. Stir in dried Apricots, Sultanas and Nuts.
Spoon into the prepared pan. Smooth surface. Cover tightly with foil.

3. Cook in a moderate oven (180C.) for 1 hour. Remove foil.
Cook for a further thirty (30) minutes, or until golden and cooked when
tested!

Stand in pan for about five (5) minutes before turning out onto a
wire rack to cool.

4. Serve loaf warm or cold, cut into thick slices!

* LOAF can be made up to two (2) days ahead. Store in an airtight container.

Or freeze for up to two (2) months!
(Also, try toasting slices and serving with extra spread/if desired).

SYDNEY REFUGEE TEAM

"Recently I went to a Sudanese lady's house for her regular English lesson. She wasn't at home, and as I sat in the car, feeling a little frustrated and trying to decide how much longer to wait, I heard someone calling my name. It was Rachel (name has been changed to protect identity), an African lady I had met once a few months back who was out for a walk with four of her seven children.

I was amazed that she had remembered me and we chatted while I cuddled one of her gorgeous little babies. Her husband had been in Africa for eight months and within ten minutes she had shared with me her loneliness and struggles in coping with all the children while he was away.

The next week I visited Rachel and her children. The kids were delighted to have a "special visitor" and spent the day climbing all over me, and Rachel was happy to have another adult to talk to and have some help with the babies. Since then we have become good friends
and I feel like I have been welcomed not only into her home but into her family as well.

Rachel is an amazing woman. She has spent 20 of her 29 years in two separate refugee camps in Africa after fleeing civil war in southern Sudan. She came to Australia five years ago, speaks four languages, manages a household of seven children and does it all with a smile. We talk about all sorts of things - cooking, life in Africa, life in Sydney, our joys and sorrows - we even compare notes on raising teenagers! I've been able to talk to her about God and his love for her, and she acknowledges his presence and where she has seen Him go before her in her own journey.

As I think back on that day, I am reminded again that God's plans are different to mine, that his thoughts are higher than mine. I thought I was there to teach English, but He had a different agenda, one that has made a huge impact on the lives of others.

Pray for Rachel. I count it as a privilege to call her a friend. My visits may have helped ease her loneliness a little, but I wait expectantly to see God himself step into her life and fill the voids in it". By Sally Jones.

LARGE RUBBER Tyre segments can be easily nailed to the bottom of a walk-ramp so as to promote control to the user and stop any sliding of Wheelchairs (ESPECIALLY in Winter) !

* 'HAWC'.. "I love it" ..

THIS DAY has been okay. I HAVE been practicing certain exercises that I do twice a week with a trainer at St. Laurence REHAB. Gym (which is known as "HAWC" - Health and Wellness Centre). This Rehab. is different in the form of being JUST a gym.

I was referred to this Gym by my General Practitioner in the use of the 'Allied Health' scheme. Told Nikky (my professional trainer) that "I Love it" there. She smiled.

EVERYONE is friendly (INCLUDING THOSE who do rehab. exercises for WHATEVER). The 'exercisers' vary from Stroke victims, Heart Attack victims, Car Accident affected victims and those with "MS" (Multiple Sclerosis) as it's commonly called.

I've been doing bi-cep CURLS, leg lifts (to the best of my ability - my right leg is weaker than the left leg), stretching a huge 'rubber band' with my hands, sitting (in my locked-in Wheelchair) to work the Water (wheel) ERGOMETER rotating both hands in devices (with a similar PULL to rowing MOTION) while the blue water swishes visibly inside that wheel. It's an amazing piece of activity which at the time of use it digitally 'tells' me my pulse rate, the time I have taken to use the machine, and much, much MORE.

YES! "I LOVE IT".

Nikky looks and says that she can see my muscles trying to move when I'm not SO sure (during the other manual exercises). When she points out to me the muscles THAT ARE trying to move/they are ACTUALLY moving, I can THEN feel and see that!

*EXERCISING also promotes good pro-active ENDORPHINS!

SUCH a POSITIVE atmosphere and experience. I heartily recommend it.

* LEMONADE !!

1. Combine 1 cup caster (small grain) sugar OR try using Raw sugar, 1 cup water and 1 cup freshly squeezed lemon juice (approx. seven (7) lemons) in a medium saucepan.

2. STIR over a low heat until sugar has dissolved then increase heat and simmer for ten (10) minutes.

3. REMOVE and pour into jug and chill. ADD 1 litre of plain mineral OR soda water, ice and mint leaves (if desired) and serve!
