Cheers.k. *The following recipe is EASY to make in just five (5) BRIEF easy steps and won $100 in a recipe CONTEST!


'LOW-FAT Tea Loaf'. ~Serves: 8-10.~ Prep.: 12 minutes. Cook: 40 minutes. INGREDIENTS: 1 cup currants or sultanas 1/4 cup cooled tea 1/3 cup honey 1 egg, lightly beaten 2 cups self-raising flour, sifted 25g. butter, melted METHOD: 1. PREHEAT oven to moderate. 180deg.C. LIGHTLY grease a 10 x 20cm. loaf pan. 2. In a LARGE bowl, combine dried fruit and tea. Soak for five (5) minutes! 3. ADD honey and EGG to mixture. FOLD flour and butter through, UNTIL well-combined. REMOVE any flour lumps. 4. POUR into PREPARED pan and bake for 35-40 minutes, or until cooked when tested with a skewer. 5. TURN onto a wire rack and cool. SERVE with a low-fat sunflower spread! * TOMATO and BASIL BRUSCHETTA !!

Serves 4 Preparation 5 minutes
Cooking 10 minutes

1 stick Italian-style bread,
sliced 4 tomatoes',
finely chopped
1 small spanish ("red") onion,
finely chopped
1/4 cup chopped fresh basil
1 garlic clove, crushed
Balsamic vinegar, to serve

1. Preheat oven to hot, 200deg.C. Spray
an oven tray with Olive oil.

2. Place bread on tray. Spray with
Olive oil. Bake for 10 minutes, or until
beginning to brown.

3. In a bowl, combine all remaining
ingredients. Season to taste.

4. Spoon onto bread bases. Drizzle with
a little of the vinegar.

Per serve 1185kj, 2.8g fat, 0.4g. sat. fat

TIP - Bruschetta will taste
more delicious if the bread
bases are warm.
