* TOMATO and BASIL BRUSCHETTA !!

Serves 4 Preparation 5 minutes
Cooking 10 minutes

1 stick Italian-style bread,
sliced 4 tomatoes',
finely chopped
1 small spanish ("red") onion,
finely chopped
1/4 cup chopped fresh basil
1 garlic clove, crushed
Balsamic vinegar, to serve

1. Preheat oven to hot, 200deg.C. Spray
an oven tray with Olive oil.

2. Place bread on tray. Spray with
Olive oil. Bake for 10 minutes, or until
beginning to brown.

3. In a bowl, combine all remaining
ingredients. Season to taste.

4. Spoon onto bread bases. Drizzle with
a little of the vinegar.

Per serve 1185kj, 2.8g fat, 0.4g. sat. fat

TIP - Bruschetta will taste
more delicious if the bread
bases are warm.
