Cut the flesh of an avocado into cubes and toss with about 24 baby spinach leaves and 2 teaspoons sesame seeds. COMBINE 1 tablespoon wholegrain mustard with 1 tablespoon lemon juice. Add to the avocado and toss well. PLACE between slices of wholemeal (wholewheat) bread. Serves 3.

~ 'Hawaiian' LEMON Fish ~
Ingredients:
2 egg whites
1/4 cup cornflour
4 white fish fillets
2 bananas, peeled
1 cup shredded (not dessicated) coconut
1/2 cup oil (of your choice)
Lemon sauce:
1 tbspn. cornflour
1/4 cup lemon juice
1 tspn. grated lemon rind
1 tspn. grated fresh ginger
1 cup fish stock
LIGHTLY beat the egg whites and cornflour together.
Cut the fish in half lengthways and then in half across.
Dip the fish and bananas in the egg mixture, then toss
in the coconut.
Heat the oil in a large frying pan, add fish and
bananas in batches and fry until golden-brown and
crisp . To make the sauce, mix the cornflour and
lemon juice together in a small saucepan.
ADD the lemon rind, ginger and stock. STIR over
medium heat until the sauce boils and thickens.
Cook for one (1) minute. * Serve with the fish and
banana.

They also hold a world of meaning for the child of God, for in these verses can be found rest and refreshing, encouragement and instruction and abundance of resource for life and service.
God's children often expend a great amount of time and effort to complete a task for the Lord only to find physical, mental and, yes, even spiritual weariness resulting. When the burden of it all weighs heavily, when problems seemingly have no answers, is it not sweet to hear those comforting words: "Come to me . . . I will give you rest. . . . my yoke is easy and my burden is light"?
Struggling Christian, determined to be all that God wants you to be, are you striving in your own strength? Stop the self-effort and get into the yoke with Jesus, your Savior. His yoke is easy, His burden is light. If what you are carrying is hard and heavy, then it must not be of His making.
Everything the child of God needs to live the Christian life is in Jesus. He is the reservoir of life and power. Without Him we can do nothing!
Come . . . learn from Him . . . find rest in Him every day. Do His work in His strength." ESTHER KING

*** ~ GRACE !! ~ ***
WHAT makes Christianity different from all the other religions of the world? Years ago that very question was discussed at a conference. Some of the participants argued that Christianity is unique in teaching that God became man. But someone objected, saying that other religions teach similar doctrines. What about the resurrection? No, it was argued, other faiths believe that the dead rise again. The discussion grew heated.
C.S. Lewis, a strong defender of Christianity, came in late, sat down, and asked, "What's the rumpus about?" When he learned that it was a debate about the uniqueness of Christianity, he immediately commented, "Oh, that's easy. It's grace."
How right he was! The very heart of the gospel is the supreme truth that God accepts us with no conditions whatever when we put our trust in the atoning sacrifice of His incarnate Son. Although we are helplessly sinful, God in grace forgives us completely. It's by His infinite grace that we are saved, not by moral character, works of righteousness, commandment-keeping, or churchgoing. When we do nothing else but accept God's total pardon, we receive the guarantee of eternal life (Ti. 3:4-7).
Good news indeed. What a gospel! What a Saviour! - VCG
Marvelous, infinite, matchless grace,
Freely bestowed on all who believe!
You who are longing to see His face,
Will you this moment His grace receive? - Johnston

'LOW-FAT Tea Loaf'. ~Serves: 8-10.~ Prep.: 12 minutes. Cook: 40 minutes. INGREDIENTS: 1 cup currants or sultanas 1/4 cup cooled tea 1/3 cup honey 1 egg, lightly beaten 2 cups self-raising flour, sifted 25g. butter, melted METHOD: 1. PREHEAT oven to moderate. 180deg.C. LIGHTLY grease a 10 x 20cm. loaf pan. 2. In a LARGE bowl, combine dried fruit and tea. Soak for five (5) minutes! 3. ADD honey and EGG to mixture. FOLD flour and butter through, UNTIL well-combined. REMOVE any flour lumps. 4. POUR into PREPARED pan and bake for 35-40 minutes, or until cooked when tested with a skewer. 5. TURN onto a wire rack and cool. SERVE with a low-fat sunflower spread!
