1 tablespoon green tea leaves
1/4 cup chopped mint leaves
4 lemon slices, to serve
4 mint sprigs (small individual pieces), to serve
sugar cubes (preferably raw ?), to serve

MINT TEA preparation:
Preparation - 5 minutes
Serves - 4 (makes 1 litre)
1. Place the green tea and mint into a clean warmed teapot along with 1 litre of boiling water and leave to steep (soak, saturate) for just /only 5 minutes !
2. To serve, place a slice of lemon and a sprig of mint into 4 clean glasses. Pour the tea through a strainer into the glasses and serve with sugar cubes.

This special dinner party sweet can be served hot or cold.Three (3) egg yolks, 1-1/2 ounces (oz.) sugar (raw?), 1 gill (1/4 of a pint - about 150ml) of Marsala, Madeira or any good sweet sherry.
BEAT egg yolks and sugar until light and creamy. STIR in the wine. HEAT, beating continually. DO NOT BOIL. As soon as it begins to rise pour into glasses and serve with spoons. FOR two (2).
N.B. Heating the alcohol to a certain temperature destroys the alcohol content and any potential bacteria in eggs.
This is an enchanting Sicilian sweet. A particular summer favourite in Palermo (deliciously refreshing) !!
You cut out the flesh of a perfectly ripened watermelon. Sieve it and put it in a large saucepan (you should have about 1-3/4 litres of seeded, chopped watermelon) with 750g of sugar (raw?), and three (3) envelopes of gelatine previously softened in 140ml cold water; mix well, and boil for a few minutes.
WHEN you have taken it from the fire, add 1/2 teaspoon of vanilla, then 185g of chocolate chips cut in half. Three (3) tablespoons each of minced candied orange rind and citron (fresh fruit like a lemon, lime, orange et-cetera; citrus fruit), about 125g of blanched, coarsely chopped pistachios.
Keep stirring so that everything is distributed uniformly; then, pour into a mould and keep in the refrigerator for at least three (3) hours.Bon Apetit
400g 'chat' (baby) potatoes, thinly sliced
4 garlic cloves, unpeeled
1 lemon, thinly sliced
10 sprigs thyme
1 lemon, halved, EXTRA
2 x 500g spatchcocks*
1 tablespoon lemon juice
2 tablespoons olive oil
sea salt and cracked black pepper
Preheat oven to 200deg.C. Arrange the potato in the base of a baking dish and top with the garlic, lemon and halve the thyme. Place the remaining thyme and lemon halves in the spatchcocks' cavities and secure the legs with kitchen string. Place the spatchcocks on top of the potato, drizzle with lemon juice and olive oil and sprinkle with the salt and pepper. ROAST for 40 - 45 minutes or until golden and cooked through. Serve with the potato, lemon slices and garlic. Serves 2.* You can buy spatchcocks (baby chickens) from a retail or wholesale meat butcher and some supermarkets.
* Fully fill/"Stuff" the spatchcocks and slice the potato beforehand and place them in the oven when your guest arrives. Once the spatchcocks begin roasting, you can relax.

ANOTHER Donna Hay Recipe/ for romance?
CHOC-Orange 'Brownie' CAKES
125g butter
125g dark chocolate, chopped
2 eggs
2/3 cup raw caster sugar
2/3 cup almond meal
3 tablespoons cocoa, sifted
1 tablespoon orange-flavoured liqueur
1 tablespoon finely grated orange rind
Icing sugar, for dusting
Double (thick) cream and raspberries, to serve
Preheat oven to 180deg.C. Place the butter and chocolate in a small saucepan over low heat and stir until melted and smooth. Place the eggs and caster sugar in a bowl and whisk lightly to combine. Add the melted chocolate and stir to combine. Add the almond meal, cocoa, orange liqueur and orange rind and fold through to combine. Pour into lightly greased 4 x 1 cup capacity muffin holes* and bake for 25 - 30 minutes or until just set. Cool in the tin!
Dust with icing sugar and serve with cream and raspberries.
Makes 4.
* To line the muffin holes, cut 8 strips of non-stick baking paper and arrange 2 strips in a cross pattern in each base.
* You can make the choc-orange brownies the day before.
Store them in an airtight container until ready to serve.

"DO I really have to read Leviticus ?" A young executive asked me THIS in earnest as we talked about the value of spending time in reading the Bible. "The Old Testament seems so boring and difficult," he said.
MANY Christians feel this way. The answer of course, is that the Old Testament, including Leviticus, offers background and EVEN contrasts essential to grasping the New Testament. While Isaiah challenges us to seek God (Isaiah 55:6), he ALSO promises us that God's Word accomplishes what the Lord wants it to accomplish (Isaiah 55:11). SCRIPTURE is alive and powerful (Hebrews 4:12), and it is useful to teach, correct, and instruct us (2 Timothy 3:16). God's Word never returns void (Isaiah 55:8-11), but sometimes it is not until later that God's words come to mind as we need them.
The Holy Spirit uses the truths we've stored from reading or memorization, and He helps us to apply them at just the right time. FOR example, Leviticus 19:10-11 speaks of business competition and even caring for the poor. The Spirit can remind us of these concepts, and we can use them, if we've spent time reading and contemplating that passage.
Reading the Bible turns our minds into storehouses through which the Spirit can work. That's a great reason to read Leviticus and the other 65 books as well." RG.
