This special dinner party sweet can be served hot or cold.
Three (3) egg yolks, 1-1/2 ounces (oz.) sugar (raw?), 1 gill (1/4 of a pint - about 150ml) of Marsala, Madeira or any good sweet sherry.
BEAT egg yolks and sugar until light and creamy. STIR in the wine. HEAT, beating continually. DO NOT BOIL. As soon as it begins to rise pour into glasses and serve with spoons. FOR two (2).
N.B. Heating the alcohol to a certain temperature destroys the alcohol content and any potential bacteria in eggs.
