Makes about: 2.5L Prep: 10 minutes.
250g punnet strawberries
125g punnet raspberries
1-1/2 cups chilled apple and blackcurrant juice
1 tblsp lime juice
1/2 cup fresh mint leaves
2 cups ice cubes
750ml bottle chilled non-alcoholic apple cider
1 REMOVE and discard stems from strawberries. Chop strawberries.
2 PLACE strawberries, raspberries, apple and blackcurrant juice, and lime juice in a large serving jug (three-litre capacity).
3 JUST before serving, ADD fresh mint leaves and ice cubes. SLOWLY add apple cider. STIR gently to combine.
4 POUR into chilled serving glasses.
TOP TIP: Berries can be either frozen OR defrosted!

~ Baked Sweet Potatoes with Lime ~
SERVES: 6.
6 sweet potatoes.
Juice of 1 to 2 limes, to taste.
Preheat oven to 350 deg.F.
Prick the sweet potatoes with a fork. PLACE on a baking sheet and bake until tender when pierced with a fork, about 45 minutes. REMOVE from the oven and slice in half lengthwise almost all the way through. SPRINKLE with the lime juice. COVER and chill overnight.
