*BANANA & ORANGE Delight !!
Ingredients:
-1 small Banana.
-2 small Oranges.
-25g. low-fat butter spread.
-2tbsp. raw OR brown Sugar.
-1 tsp. ground Cinnamon.
-15g. chopped Pistachio nuts.
Method:
1. Put low-fat spread, Cinnamon, Sugar in microwave dish with grated rind and juice of one Orange and heat on high for ABOUT one minute.
2. PEEL and cut Banana into large chunks. Peel OTHER Orange and divide into segments.
3. ADD fruit to dish, stir into liquid, cover and return to microwave on high for a minute.
4. SPRINKLE with nuts for serving.

FRAGRANT Roses..
Returned home from Rehab. Have been VERY busy (especially during this Christmas time of year) in arranging appointments with Medical Professionals to support me in whatever ways that are appropriate/beneficial to the current needs of my chronic condition.
A recall in general regarding my first experience in 'Rehab'.:
Was given a notebook and pen from my speech pathologist to write down anything I might be feeling at the time.
I wrote down that I NEED to follow through step by step if I'm going to achieve all that I can gain in the time that I'm there (sometimes found that difficult but "pushed on"). Exercising by pushing the manual wheelchair around the wards did improve my core strength. I especially noticed that by the time I returned home.
Before I entered Rehab. I felt unable to cope with the disease and even
through many times of the feelings of solitude I would want to cry every second of every minute of every hour of every day. Oftentimes it seemed to me that I was doing just that whether physically or even spiritually but, my God and Saviour always pulled and pulls me through, learning and appreciating all He has given me and will always give me (providing I always seek His help). I'm quite sure that with the challenges I've been presented with in life that if it wasn't for Him, I most probably wouldn't be here even to type this to you (or for myself).
Am tap, tap tapping these keys. Am "tiredish" but am very much privileged in sharing my journey.
My medicines have not helped my weight gain in fact I believe that thay have contributed to it due to the chemical lowering of my metabolic rate. At last I've been given a medicine that has been "tailormade" for me. According to Anna (my Rehab. Speech Pathologist) about every second person in the population is taking and benefits from an anti-depressant as a support in this complicated world. I literally thank the Lord for all His help in looking after all my needs. Sometimes help has to be sought for Jesus to help us. He is a practical God and works through many ways just for us (if we want His help). Over the years, I've found I constantly need His assistance. Talking/praying to Him has kept me close to Himself. He does deserve to be thanked.

Receptionist has just walked in with a vase of beautiful freshly-picked Roses from her garden. She stayed and explained what each Rose was called. They are "deliciously" fragrant. "Thank you Lord". I feel and know in my heart there is joy and beauty.

BON Voyage?
Hi dear diary,
Won't be on the computer for at least 2 to 3 weeks. Am going to rehab. hospital! Broke my foot in 4 parts nearly 8 weeks ago. Had the plaster cast taken off 6 weeks ago, then a bandage was applied in it's place for 2 weeks as a support (removed it last night).

** The CANDID Adventure of "Indy" CAT !!! **
THIS day is memorable LIKE all other days.. EXCEPT some days agree with me more than others!
My "hubby" got up at 7am. to attend a 'Men's Breakfast' at church (he said that it was okay). I stayed in bed then got up at 12.30pm. We both ate poached Eggs on Crumpets which we enjoyed for Lunch (my 'Brunch').
WE'VE been in our house now for two (2) years AND summise that we have ACCUMULATED more "things" than what we really need. Why does that happen?? With us - it's because we put ''stuff" away, then can't find it and THEN we forget all about it!
A SHIFT in house involves sooo much work in its sorting (ESPECIALLY when you become older in age). *2 years and it seems worse than ever.
It is a learning experience.
"Indy" cat is running around very closely to the wires of this computer AND it really will be a learning experience for HER if she UNPLUGS any connecting wires. She has done that before when she has had an attack of the "cat crazies".
It's a crazy world that we are living in. "INDY"....blah!

"He has put eternity in their hearts" (Ecclesiastes 3:11).
"I once came across a scene of beauty outside Anchorage, Alaska. Against a slate-gray sky, the water of an ocean inlet had a slight greenish cast, interrupted by small whitecaps. SOON I saw these were not whitecaps at all but whales-silvery white beluga whales in a pod feeding no more than 50 feet offshore. I stood with other onlookers, listening to the rhythmic motion of the sea, following the graceful, ghostly crescents of surfacing whales. The crowd was hushed, even reverent. For just a moment nothing else mattered.
The author of Ecclesiastes would have understood the crowd's response.
He sees with dazzling clarity the beauty in the created world and that God "has put eternity in their hearts" (Ecc. 3:11). Such an elegant phrase applies to much in human experience. Surely it hints at a religious instinct. Our hearts perceive eternity in ways other than the religious.
Ecclesiates presents both sides of life on this planet: the promise of pleasures so alluring that we may devote our lives to their pursuit, and the haunting realization that these pleasures ultimately do not satisfy. God's tantalizing world is too big for us. UNLESS we acknowledge our limits and subject ourselves to God's rule, unless we TRUST the GIVER of all good gifts, we will end up in despair." P.Y.

PARFAITS can be made several hours ahead; keep, covered, in refrigerator.
* Recipe unsuitable to freeze.
2 x 425g cans boysenberries, DRAINED
1 cup READY-MADE custard
1/2 x 200g packet coconut macaroons, CRUSHED
RESERVE eight (8) whole boysenberries for decoration; PUREE remaining berries.
SPOON one (1) tablespoon of custard into four (4) 1-Cup capacity dessert glasses.
TOP with a layer of boysenberry puree and one (1) tablespoon crushed macaroons.
REPEAT layers, ending with a layer of macaroons. DECORATE with whole boysenberries. SERVES four (4).

"WHO'D'A THUNK IT" ?? .. yesterday !
Today .. I slipped and fell and SPENT three and 3/4 hours on the floor all because I have MS.
We are all CHALLENGED in many ways! FORTUNATELY, my daughter arrived home early from her workplace and tried to help me by strategically placing cushions under my 'derriere' to hopefully "soften the blow" - and, it did..abit. My hubby. soon arrived home from his workplace so that he and my daughter would be able to lift me from the floor.
I don't remember ever fretting (crying) so much. NONETHELESS, I've stopped my shedding of tears and am NOW productively tapping the keys of the computer. I must be MORE careful.. MUCH, more careful in the future.

TODAY has been good! WENT to the Cinema, bought some nice new-season Summer clothes (30% off at 'Target'), enjoyed drinking an ASSAM (Organic) Tea while eating a special treat of Jam-filled shredded Coconut Lamington (*not all cafes' stock the Lamington covered in SHREDDED Coconut. It tastes just like 'homemade texture' cake - THEY may stock the Lamington with Desiccated Coconut - NOT the same for me). NICE Spring weather and it is paving the way for coming Summer!
''PASSIONFRUIT Fluff ''..
(*great for Christmas)
"Fluff" can be made up to three (3) days ahead;
KEEP, covered, in refrigerator. CHILL evaporated milk BEFORE using.
(* Recipe unsuitable to freeze.)
85g. packet Lemon jelly crystals.
1/2 cup boiling water.
375ml. can evaporated milk.
Six (6) Passionfruit.
Combine jelly crystals and boiling water in small bowl, STIR until dissolved; COOL to room temperature. BEAT milk in LARGE bowl with electric mixer UNTIL thick and fluffy, GRADUALLY beat in jelly and Passionfruit pulp.
SPOON mixture into LARGE serving bowl, refrigerate until SET. SERVES four (4) to six (6).

1 cup S/R flour.
3/4 cup Caster sugar.
Pinch salt.
1/4 cup Milk.
1 tab. Cornflour.
2 Eggs.
1/4 tsp. Vanilla essence.
METHOD:
SIFT dry ingredients. Put ALL ingredients in together! MIX for five (5) minutes. RING tin (3 and 1/2 inches high or CONVERT to Metric measure).
CENTRE Oven (375deg.F. or convert to Celcius). Cook for forty (40) minutes.

CHOCOLATE YOGHURT CAKE !!
INGREDIENTS:
2/3 cup Sunflower Oil (or suitable Vege. Oil for Cake).
2/3 cup of Whole milk Yoghurt.
1 and a 1/4 cup of brown Sugar.
3 Eggs, beaten.
1 tspn. (teaspoon) Baking-soda.
1 and 3/4 cup of Self-raising flour, sifted.
2 Tblspns. (tablespoons) of Cocoa powder.
75gms. (grams) of melted Chocolate
( * if melting Chocolate in double saucepan
i.e. don't allow steam/water to permeate the chocolate because it will
so-call freeze it and then be rendered useless).
METHOD:
1. Grease a 23cm. (centremetre) round tin and line it!
2. Pre-heat Oven to 180 degrees celcius.
3. Beat Oil, Yoghurt, Sugar and Eggs together until well combined.
4. Sieve flour, Baking-soda and Cocoa powder together and then beat
into mixture until well combined.
5. Gently stir melted Chocolate into mixture and then pour into tin.
6. Cook for 45-50 minutes. Leave to cool for 5-10 minutes then turn-out and
leave to cool completely!
ICING:
350gms. of soft Cream-cheese i.e. 'Philadelphia' ("Philly" - Australia).
1 cup of Icing sugar.
100gms. of Dark Chocolate, melted.
* Beat cheese and Icing sugar together until well combined and then stir in the
Chocolate.
* Slice cake into two (2) halves and place some of the Icing in the middle and
then cover the Cake with remainder of the Icing. * Bon Apetit.

6. Cook for 45-50 minutes. Leave to cool for 5-10 minutes then turn-out and
leave to cool completely!
ICING:
350gms. of soft Cream-cheese i.e. 'Philadelphia' ("Philly" - Australia).
1 cup of Icing sugar.
100gms. of Dark Chocolate, melted.
* Beat cheese and Icing sugar together until well combined and then stir in the
Chocolate.
* Slice cake into two (2) halves and place some of the Icing in the middle and
then cover the Cake with remainder of the Icing. * Bon Apetit.

*** EMBRACING the Moment !! ***
Here I go.. WOW.. I'm embracing this moment! Am looking forward to posting some little gems of encouragement, if not just for myself. Heard the other day that with every negative pinion in life there is always a positive "pinion" that can be realised to take its place. A pinion can mean a bird's wing being disabled (or confined) and it can also be described as a small cog-wheel. At the most, a small cog-wheel can move. I'm thankful that at the most, I can move. A small cog-wheel simulated with much challenge in life.. PLAN, plan and plan with an eye to the future. I owe to be kind to myself.. that then allows me to value myself!
It's Christmas in seven (7) weeks and wonder where this year has gone.. It's been and it's gone (the older I become, time progressively seems to pass). Christmas purposes the good choice of a wonderful creative time of gift giving! Gifts don't always need to be wrapped or presented in a box. Brightly coloured flowers or a very pretty single Rose can be delivered during the Christmas season.. your choice. Going out for a "cuppa" is always on my agenda. Cinema tickets are great. The world is indeed our PERSONAL "Oyster" where we can choose to reflect a little "fingerprint" of ourselves in gift-giving to someone else.. for someone else. Tomorrow.. I will look into some cooking.. maybe, for Christmas. Once again, it's up to choice!
