Although this winter has been icy the sun did have its shiny spots which was lovely ! The sea is always an inspiration. I think part of that is the fact of enjoying a change of environment. Went shopping and "of course", delighted in taking pleasure of imbibing "a cuppa".

*My greatest encourager IS the Lord Himself and quite a few times in my readings of the Bible, PSALM 45 (a song of Love) would often show itself uttering with loud voice (personally to my heart).

~ * PASSIONATE piece of REAL ('LOCHARD') 'Scottish' SHORTBREAD ! ! ~
250g standard soft butter
75g caster (raw ? - your choice) sugar
175g plain flour
50g 'rice' flour
100g self-raising flour
1. CREAM standard soft butter and sugar until "fluffy".
2. ADD sifted flours !
3. PLACE combined shortbread-mixture (*shapes) onto a 20cm baking-paper covered (pizza?) pan or otherwise, place the dough evenly into a 20cm oven-proof dish.
(* Shortbread dough may be cut into different shapes if you'd like to try it that way !)
4. BAKE 150deg.C. (slow oven) for 35 minutes.
* Note: It's 'rice' flour that makes the traditional "melt-in-the-mouth" shortbread (often referred to as 'Scottish' shortbread) !
Delightful !

~ * EASY 'Special Edition' TASTY Scone-Mix ADDITION ! ! ~
1. ADD 1 x can (410g.) pie apple (usually unsweetened).
2. 1/2 teaspoon cinnamon.
3. 1 teaspoon finely grated citrus (preferably lemon) peel/rind.
* Blanched (slivered) almonds, if desired (to taste) !
ADD all ingredients evenly to basic scone mix (without overworking the dough). Try using a 'dinner-eating' knife to lightly incorporate the whole mixture.
Enjoy - "lovely".

5 eggs
8 Sao (large square dry/unsweetened biscuits)
1 cup milk
1 onion, finely chopped
chopped parsley
diced ham, bacon, (drained) flaked with a fork tuna or red salmon to taste
1 MIX all ingredients together and put in greased pie plate or quiche dish.
2 Bake for 20 minutes in a moderate oven (180deg.C.).
3 SERVE with a nutritious, tasty salad.
Voila !

1-1/3 cups (330ml) milk
125g butter, melted, COOLED
1/2 cup (125ml) passionfruit pulp
1 tablespoon fresh lemon juice
icing sugar, to lightly dust
1 Preheat oven to 180deg.C.( * 160deg.C. fan-forced.) Grease a 23cm (base measurement) pie or flan dish.
2 Combine coconut, caster sugar, and flour in a large bowl. Combine eggs, milk, butter, passionfruit pulp and lemon juice in a separate medium bowl. Add to the dry ingredients and stir to combine.
3 Pour mixture into dish. Bake for 40 minutes or until pudding is lightly golden and just set.
4 Serve warm or at room temperature lightly dusted with icing sugar and/or topped with ripe strawberries, if desired.

~ ** Cartoon ( * Food for THOUGHT ! ) ? ? ~
" A humorous greeting card showed a grotesquely thin cow wandering in a barren desert. The skinny cow was meant to illustrate "where nonfat milk comes from." The logic of the cartoon, of course, is entirely unscientific. Nonfat milk is not produced by nonfat cows!
The idea, however, reminds me of D.L. Moody's comment: "Most people talk cream and live skim milk." If our hearts are spiritually underfed, we will produce "skim milk" Christianity. Our lips may utter spiritual-sounding words in prayer, worship, and conversation, giving the impression of "top-grade cream." BUT the reality is revealed by what is consistently produced in our lives.
How can we live cream and not just talk it? David grappled with this in Psalm 19. In verses 12 and 13 he was honest with himself and with God when he asked to be cleansed from secret faults and presumptious sins. Beyond forgiveness, David knew he needed God's continuing strength and help to harmonize his walk with his talk. So he earnestly prayed, "Let the words of my mouth and the meditation (occupied in thought; reflection) of my heart be acceptable in Your sight, O LORD" (v.14).
In our walk, let's move from skim milk to cream by being open, honest and prayerful." - JEY.

His likeness shining forth in me;
