1-1/2 cups self-raising flour, sifted
125grams butter, chopped, at room temperature
1/2 cup caster sugar
Finely grated zest (citrus rind) and juice 1 orange
2 eggs
Whipped cream, extra finely grated orange zest, icing sugar, to SERVE
1. Preheat oven to moderate temperature. Line a muffin pan with paper patty cases.
2. Place all ingredients into a medium bowl. Using an electric mixer, beat on low 2 minutes until mixture is smooth.
3. Spoon mixture evenly into patty cases until two-thirds full. BAKE 12-15 minutes until cooked when tested with a skewer.
4. Cool in pan 5 minutes before transferring to a wire rack to cool completely.
5. Top with whipped cream and strands of orange zest. SERVE dusted with icing sugar.
