* "Easy, QUICK and delicious" ROAST Vegetable BAKE ! ..

5 eggs ( * preferably 'Free Range' or 'Barn Laid')
2 cups chopped baked vegetables *
2 tbsp. plain flour
1/2 cup grated tasty cheese
1/4 cup chopped parsley
season to taste
* suggest using leftover baked vegetables.
Whisk eggs well. ADD vegetables, flour, cheese, parsley and seasoning. POUR into a greased pie or casserole dish and bake in a moderate oven for 20 to 25 minutes or until set.
EAT hot or cold. Serves 4.
