* Controversial COFFEE (Historical) ! ! *

"TRY adding a pinch of salt and a dash of dry mustard to bring out the flavour
- and never ever,
say the experts, boil it!

IRISH COFFEE is for those people who like a touch of drama when they entertain. It takes a while to make . . . but you've got all night.

In each pre-warmed Irish Whiskey glass - or coffee cup, pour:

1 tablespoon (Irish Whiskey)
and ignite it.

Then add immediately:

1/2 cup hot strong black Coffee.
1 teaspoon Raw sugar.

Stir until sugar is dissolved.

(OPTIONAL/float lightly whipped cream on top. Do not stir . . . the Coffee should be drank through the cream.)

When there is no plate warmer handy, we warm the cups or glasses in a very low oven for a few moments " (Helen Arbib & Pauline Clements).
