* ESPECIALLY delightful 'Lemon Wine' MOUSSE Dessert !!

4 Eggs, separated
1/2 cup ground fine Raw sugar (*Caster sugar size)
2 teaspoons Gelatine
1/4 cup Lemon Juice
2 tablespoons Water
1 teaspoon grated Lemon Rind
1/4 cup sweet white wine

SPRINKLE Gelatine over the 2 tablespoons Water; when softened, dissolve over hot (firstly, boiled fresh) Water.

COMBINE wine, finely ground Raw sugar, Lemon Rind and Lemon Juice. HEAT gently until Raw sugar is dissolved, remove from heat and stir in the softened Gelatine mixture; allow to cool.

BEAT Egg Yolks until very light in colour; gradually, stir in the cooled Gelatine mixture. FOLD-in softly beaten Egg-whites.

POUR into Serving-bowl or individual Glasses, refrigerate until firm.

SERVES 4.
