LEMON THYME POTATO WEDGES
6 large (1.8kg) Old potatoes
2 tablespoons Olive oil
2 tablespoons Lemon juice
2 medium (280g) Lemons, quartered
1 teaspoon cracked black Pepper
2 tablespoons chopped fresh Thyme
Cut washed, unpeeled potatoes into wedges. Combine potatoes with oil,
juice, lemons, pepper and thyme in large, shallow baking dish.
Mix well to coat Potatoes in mixture. Bake, uncovered, in moderate oven
about 1 hour or until potatoes are tender.
*(If cooking Potatoes in oven with a Chicken, remove cooked Chicken,
cover loosely with foil. While Chicken is standing, turn oven to the highest
temperature, bake Potatoes about 15 minutes or until crisp and browned,
turning occasionally.) Serves 4 to 6
