'Wrinkled noses and puckered lips - sometimes this is my family's reaction to my cooking, especially when I'm trying something new in the kitchen. Recently, I had a breakthrough with a unique version of macaroni cheese. I jotted down the ingredients and tucked the recipe away for future reference. Without that set of instructions, I knew the next batch would be a flop.
Without God's instructions, Joshua would have failed at leading the Israelites into the Promised Land. The first step was to "be strong and of good courage" (Josh. 1:6). NEXT, he was to continually meditate on the Book of the Law, and FINALLY, he was to do everything it said. AS long as Joshua followed the directions, God PROMISED him "good success" (v.8).
God's "RECIPE for success" can work for us too, but His idea of success has little to do with money, popularity, or even good health! IN the original Hebrew, "then you will have good success" means "then you will act wisely." Just as God called Joshua to walk in wisdom, He wants us to "walk circumspectly, not as fools but as wise" (Ephesians 5:15).
AS we take courage in the Lord, feast on His Word, and obey Him, we have a RECIPE for godly success that's better than anything we could COOK up on our own!' - Jennifer Benson Schuldt

~ AUSTRALIAN FLOODS - 2011 ! ~
I didn't know whether to write about the floods but I am! I haven't been directly involved in the floodwaters but I've visited most of the places in the past that have been afflicted. Thank God that He has provided fellow-feeling; compassion! Feeling for another in pain which in turn can and has stirred up the sharing of emotion resulting in practical ways of help. The desire and interest in sorrow for others' suffering is deserving of applause. It has caused people to become a united state in the community of interests. They are the instruments that show to many the north, south, east and west. The compasses that reveal scope just by surrounding those who are directly suffering in reaching out by showing through their actions that just one person can still gain by effort and therefore personal accomplishment. It will take time. God bless. That's all I can say.k.

Low-fat - High-flavour Lemony BLUEBERRY "Ice Cream" !!
Serves 4 !
1 pint (2 cups) blueberries
1/2 cup sugar (try raw sugar for a more rich flavour?)
1 tablespoon cornstarch (cornflour/Australia)
1 can (12 ounces) evaporated skim milk or use equivalent of lactase included low-fat milk
2 egg whites
1 teaspoon grated lemon zest (rind/Australia)
2 tablespoons lemon juice
1 teaspoon pure vanilla extract
In a saucepan, combine the blueberries with 1/4 cup of the sugar. Place over medium heat and heat, stirring constantly, until the sugar dissolves, about 5 minutes! REMOVE from the heat. PLACE a colander over a bowl and pour the blueberry mixture into the colander. PRESS the berries through the colander with the back of a spoon. Scrape the mashed berries from the outside of the colander into the bowl with the blueberry juice. PLACE the bowl in the refrigerator.
ADD the remaining 1/4 cup sugar and the cornstarch (cornflour) to the saucepan. Stir in about two-thirds of the evaporated skim milk. PLACE over medium heat and bring to a boil, stirring constantly. Cook the mixture until it is as thick as pudding.
REMOVE from the heat and add the egg whites and the remaining evaporated milk, mixing well. STIR the milk mixture into the blueberry puree. ADD the lemon zest, lemon juice, and pure vanilla extract. STIR until blended. CHILL for 20 minutes.
POUR into an ice cream maker and freeze (according to the manufacturer's instructions) or just FREEZE (refrigerated FREEZER) in a suitable container.

~ LEMONY low-fat - high-flavour CHEESECAKE !! ~
Serves 8.
Crust:
12 graham crackers (dry biscuits/Australia), crushed
2 tablespoons butter, melted
Filling:
2 cups (1 pound) 1 per cent small curd cottage cheese
2 egg whites
2 whole eggs
1/2 cup evaporated skim milk or use equivalent of lactase included low-fat milk
1/2 cup sugar (try raw sugar for a more rich flavour?)
1 tablespoon grated lemon zest (rind/Australia)
1/3 cup lemon juice
1/4 cup all-purpose flour
lemon slices, for decoration
TO make the crust, mix together the crumbs and butter in a bowl. Grease a 9-inch springform pan. TRANSFER the crumb mixture to the prepared pan and press the mixture onto the bottom. Place in the freezer.
Preheat oven to 300 deg.F.
TO make the filling, in a food processor, combine the cottage cheese, egg whites, whole eggs, evaporated milk, sugar, lemon zest, and lemon juice. Process until smooth. ADD the flour and process a few seconds longer. REMOVE the crust from the freezer and pour the cottage cheese mixture into it.
Bake until the filling has set, about 1 hour. Cool on a rack. RELEASE the pan sides and slide onto a serving plate. Decorate with the lemon slices.

~ * My Teenager .. * ~
A special place had been placed in my heart by the Lord for teenagers. I have taught them and ministered to them.
DURING my children's teen years, Christ was my Handkerchief and my Hope. I use the word handkerchief because if you have had teenagers - and if you are perfectly honest - then you remember times when you cried with them or for them. The Scriptures tell us that Christ cried, and I knew that if, with my small amount of human love, I could cry for my teenager, Christ would know how I felt. BUT more than that, He was my Handkerchief and dried my tears. I could take any problem to Him.
Christ was my help when grades were bad. He was there when we wondered where our children were, why they had not come home as they had been instructed, what they were doing and if they were all right.
Christ was and is my Hope. I learned something as a mother of teenagers. I could love them and still want them even when they were so rebellious that I thought, I cannot tolerate you right now; I wish you didn't live here. But I never ever reached the point where I did not love my children or not want them, and I still feel the same way. My hopes for them never died, even through the rebellious times.
If, in my small way of loving, I could hold onto hope for my teenagers and love them no matter what they did, imagine how Christ can love me. Just as teenagers who are trying hard to grow up make many mistakes and can struggle with authority, we as Christians also sometimes fail. But Christ never ever quits loving us. He will be our Hope in this life and our Eternal Joy ( ** ROMANS 10: 9-13)!
We have this hope as an anchor for the soul, firm and secure (HEBREWS 6:19).

SERVES: 6.
6 sweet potatoes.
Juice of 1 to 2 limes, to taste.
Preheat oven to 350 deg.F.
Prick the sweet potatoes with a fork. PLACE on a baking sheet and bake until tender when pierced with a fork, about 45 minutes. REMOVE from the oven and slice in half lengthwise almost all the way through. SPRINKLE with the lime juice. COVER and chill overnight.

1kg butternut pumpkin, peeled and diced
2 tbs. red curry paste
300ml coconut cream
1/4 cup coriander, chopped
Method:
Saute pumpkin and red curry paste until it starts to catch on the saucepan.
ADD coconut cream to deglaze the pan, top with enough water to level with the pumpkin and bring to boil.
Reduce heat and simmer until the pumpkin becomes soft and mushy. Puree, season with salt and pepper and fold in chopped coriander.

THIS world is "a sorry state of affairs", isn't it? Where does a person begin and end with an hypothesis?? Listened to the hour World News tonight and many Countries are suffering from a deplorable lack of colour. Let's face it - it's sorrowful; sad. There is severe trouble causing the mental pain of fatigue or want.
WHAT about man's greed (covetousness)? AVARICE. That's how wars begin. Many cases are even lamentable. WHERE is an honest mandate that represents genuine truth and prosperity? In THIS world - it's greed!
THIS view is "just a drop in the ocean", so to speak, BUT I find all the before-mentioned to be depreciating.

~ "Tea Party" .. ~
WHEN our first grandson was just a toddler, I had the joy of being his babysitter on many occasions. Routinely, about mid-morning, I would announce, "Time for a tea party," and we would sit down to Ritz crackers with peanut butter and a small glass of milk. One day Jeffie came to the kitchen sink where I was working and announced to me, "Time for loving, Grandma." Joyfully I picked him up and we shared hugs and kisses, then away he went to play. This became a happy ritual for the rest of my baby-sitting days.
I could not help but think how pleased our Heavenly Father must be when we come to Him and say, "Time for loving." This "time" is when we forget about our work and other interests and just take time to read His Word and communicate with Him by prayer, telling Him of our love for Him. We not only speak of our love, we also demonstrate it by our very act of using exclusively for fellowship with Him.
We have a good example in God's Word of one who took "time for loving." Luke 10: 38 - 42 tells of Mary who "sat at the Lord's feet listening to what he said." We hear Jesus' approval of Mary's "time for loving" in these words, "Mary has chosen what is better, and it will not be taken away from her."
Let us take time to tell the Lord we love Him and make time to show it.
There is a time for everything, and a season for every activity under heaven . . . a time to love (ECCLESIASTES 3: 1, 8).

These muffins can be whipped up in just five minutes. Serve small ones for morning or afternoon tea, or make larger muffins, for Sunday brunch.
Preparation time: 5 minutes
Total cooking time: 25 minutes
Makes: 6 large or 12 small muffins
Ingredients:
1 tablespoon maadamia nut oil
2 eggs ( * preferably free range or barn laid)
1/3 cup (115 g/4 oz) honey
1 teaspoon cinnamon
1/2 cup (125 g/4 oz) low-fat vanilla yoghurt
2 teaspoons finely grated lemon rind
2 tablespoons lemon juice
1/2 cup (50 g/1-3/4 oz) rolled oats
1/2 cup (60 g/2 oz) sultanas
1 cup (150 g/5 oz) wholemeal self-raising (S.R.) flour
1/2 cup (60 g/2 oz) self-raising flour
Method:
1 Preheat the oven to moderate 180 degrees C. (350 deg.F/Gas 4) and grease a 6-hole, 1 cup (250 ml/8 fl oz) capacity muffin tin or a 12-hole, 1/2 cup (125 ml/4 fl oz) capacity muffin tin.
2 Combine the oil, eggs, honey, cinnamon, yoghurt, lemon rind and juice and oats in a bowl and mix together well. Add the sultanas and sifted flours and stir until just combined!
3 Spoon into the muffin tin and bake for 20 - 25 minutes, or until golden brown. Cool in the tin for 2 minutes, then turn out and serve warm.

Today certainly is "a given" (for us all) and even when I don't understand, yet know that God is actively working behind the scenes of my life, that alone imparts the true living sense of His word. His strength comes into being and I continue on regardless of how I may feel.
That is my personal experience of help; His help. His enduring uplifting and encouraging power reveals itself practically just when I need it (He knows when I require His loving care even before I'm aware that I do - amazing, isn't it?). THAT in itself, reveals to me His enablement of the details in my life - and how He does lovingly care for me. It's perfectly timed for a moment in my time which assists me in a way that is good but, in a way that I would've never have thought. It turns out for the best and I wouldn't have it any other way!

~ God SURELY works in THIS way ! ~
I've come to the conclusion, that it's needless to continue to "push myself". I'll just blog for the enjoyment of it (took me a while to evaluate/learn that, didn't it?). Why should I pressure myself? Simple! All is good.k.

~ How much Sun ?? ~
EVERYONE needs to get enough vitamin D so they can build healthy teeth and bones. THAT'S why it's important to spend at least 5 to 20 minutes (depending on the weather season) each day in the sun - salmon, tuna and LACTASE included milk are rich in vitamin D, too.

BREATHING supplies our bodies with oxygen, so when we don't breathe deeply enough, we can't function as efficiently. RATHER than breathing from the chest, try breathing from the DIAPHRAGM, with slow, deep breaths, which help clear the mind enabling achievement of a feeling of calm in both body and mind to keep you revitalised (this needs to be practiced everyday) !!

MORE than ever, Australians are putting their health and wellbeing above all else in their lives. REGARDLESS of age and circumstance, feeling good and being healthy and happy is a necessity for everyone and of all ages!
AS people try to juggle work, family, friends, social life, as part of everyday life, they realise that without good health and sense of wellbeing, they are unable to tackle the challenges they regularly encounter with their hectic and demanding lifestyles.
WHILE good health may well be about following a sound - practical diet, and embarking on a regular and sensible exercise program, it also is about taking a sanctity (sacredness) approach to not just our bodies, but our mind and spirit, too. While it is important to watch what you eat, nourishing your body with good, wholesome foods and even vitamin supplements, it is just as essential to care for your spiritual and mental state. ~ * WINTER Fresh and Dried Fruit Salad !! * ~
A summer fruit salad is easy, BUT a winter salad is more of a challenge. THIS is the time to combine dried fruits with the available fresh fruits!
Preparation time: 10 minutes + ( * 20 minutes standing).
Total cooking time: 10 minutes. Serves: 6.
180 g (6 oz) dried apricots
90 g (3 oz) dried peaches, chopped
90 g (3 oz) dried nectarines, chopped
220 g (7 oz) pitted prunes
1 cinnamon stick
1 cup (250ml/8 fl oz) apple juice
2 red apples
1 tablespoon lemon juice
2 navel oranges, peeled and sliced
2 mandarins, peeled and segmented
1 PUT the dried apricots, peaches, nectarines, prunes, cinnamon stick and apple juice in a large pan. PLACE over the heat and bring to the boil, then COVER and SIMMER for 5 minutes. REMOVE from the heat and set aside for 20 minutes. REMOVE the cinnamon stick.
2 PEEL the apples, cut into chunks and toss with the lemon juice.
3 SERVE the cooled dried fruit topped with the apple chunks and the orange and mandarin slices. SERVE with low-fat yoghurt (of your choice), if desired.

Protein 4 g; Fat 0.5 g;
Carbohydrate 47 g; Dietary Fibre 9 g; 865 kj (205 cal)

~ Celebrating .. at Bellarine; AUSTRALIA ~
Yesterday was a very good day ... and, I'm talking about it with it having just finished 38 minutes ago (as I'm typing, my laptop says it's now 12.38am. I had better hurry and finish here soon).
I'm sure it's because this year is a renewed start that I'm feeling refreshed. It's not because it's snowing (am very sorry for certain parts of the world where it has been intolerably snowing and with floods being so prevalent at this time in other places of Australia).
It's summer in Australia and the temperature was 41 degrees celcius on New Year's Eve here at Bellarine. Yes .. I survived! The wind was a hot northerly and we shared our gas BBQ dinner with a next-door neighbour.
Our daughter was celebrating elsewhere .. so, there was just three (3) of us eating, drinking lemon, lime and bitters and lemon and barley cordial with sparkling mineral water (that was me) amongst the frivolity. It was a fun time. At midnight, we enjoyed listening to the local 'fireworks'!
Thought I'd let you know that I decided to delete the
titled post 'PROLONGING BLOG POSTINGS' because it is now no longer relevant!
Have been "challenged" and no doubt, will continue to be "challenged" from time to time (like everyone is). I didn't realise at that moment in time if I would be confident enough to earnestly continue with the blog. I've tried to make it special and interesting and am learning to be more patient with myself in the process. That's good.
( * WOULD very much appreciate it if you may comment in this 'comment' box or via email as to how I'm going with the post submissions on the blog - so I know where I need to make for THIS year! * Your good hints/ideas will be taken notice of. Cheers.)

~ Vitamin ALERT ~
The essential fat-soluble vitamin A, is stored in the liver after absorption! Excessive amounts of this vitamin are toxic to the liver, so it is important we don't have too much. According to the National Health and Medical Research Council (NHMRC), the maximum safe limits of vitamin A for adults is no more than 3000 micrograms per day.

~ 'EXTRA kick' (Cardamom spice) MUFFINS !! ~
Muffins are a great anywhere, anytime snack. These ones are sweetened naturally with honey and orange juice, and a little of cardamom gives an 'extra kick!'
Prep. time: 10 minutes. Total cooking time: 20 minutes.
Makes: 12.
Ingredients:
1 large carrot, finely grated
1/4 cup (90 g/3 oz) honey
2 tablespoons macadamia nut oil
1 cup (250 ml/8 fl oz) fresh orange juice
1 tablespoon finely grated orange rind
2 eggs (*preferably free range or barn laid)
2 cups (250 g/8 oz) self-raising (S.R.) flour
1 teaspoon baking powder
1/2 teaspoon ground cardamom
Method:
1 Preheat the oven to hot 220 deg.C. (425 deg.F/Gas 7) and oil a 12-hole, 1/2 cup (125 ml/4 fl oz) capacity muffin tin. Mix together the carrot, honey, oil, orange juice and rind and eggs in a bowl.
2 Sift together the flour, baking powder and cardamom into the bowl and stir quickly until just combined. Do NOT overmix-it should look lumpy.
3 Spoon into the muffin tin and bake for 15-20 minutes, then turn out and serve warm.

~ re "real" PURE Stevia (NATURAL sugar substitute) ~
Was in the supermarket TODAY (*Australia/02/01/2011) and thought I'd check if there were added ingredients in the available stevia supplies. IT is disappointing to find that the mass-market is NOW adulterating Stevia with other ingredients (although not surprised) compared to when it was first released onto its shelves as I knew of it. HOPEFULLY, 100 per cent pure Stevia is currently accessible from a 'HEALTH FOOD' Shop!
