~ "Sublime" Choice FRUITY Cheese Ball shapes (CHILLED) ! ! ~

THESE nutritious choice goodies aren't baked - they're chilled !

10 dried apricots
1/2 cup
chopped raisins or craisins
1/4 cup currants
5 pieces
crystallised ginger
1 tablespoon
finely chopped mixed citrus (orange, lemon and/or lime) peel; rind
1 cup
grated cheddar cheese
1/4 cup chopped 'california(n)'
(no bitter after-taste) walnuts or pecans (optional)

1. CHOP the apricots, raisins or craisins, currants, ginger and mixed citrus peel/rind VERY finely, mix all together. Stir in cheese until combined.

2. FORM into twelve (12) ball shapes, coat with the 'california(n)' walnuts or pecans. Put on a tray and CHILL well !
