~ SUPERCHARGED Avocado & baby-Spinach SANDWICH ~
Cut the flesh of an avocado into cubes and toss with about 24 baby spinach leaves and 2 teaspoons sesame seeds. COMBINE 1 tablespoon wholegrain mustard with 1 tablespoon lemon juice. Add to the avocado and toss well. PLACE between slices of wholemeal (wholewheat) bread. Serves 3.

Someone has said, "Sunshine all the time only makes a desert." We need the clouds, the dark days, the storms, and the rain just as much as we need the sunshine. And God, who is molding our lives, seeking to make us like the Lord Jesus Christ, knows what is best for us.
We hear Job saying: "But he knoweth the way that I take: when he hath tried me, I shall come forth as gold" (Job 23:10). Notice that Job does not say, "I know the way that He takes," but rather, "He knoweth the way that I take."
We would like to know what God is doing. We would like to pull aside the veil and see the end from the beginning. We would like to know the way that He is taking. But if we did, and if we could see, we would not need faith to believe and to accept God's way!

~ * NO BAKE 'New Year' (festive) CAKE !! * ~
9 cups wholewheat (wholemeal) cereal, crushed
375g prunes
apple juice

"The captive Hebrew singers sat beside the rivers of Babylon and wept as they remembered how life had been in their homeland. Their enemies tormented them, demanding that they sing happy songs of Zion. But the Hebrews were so discouraged that they ceased singing and hung their harps on a willow tree.
I awakened on a Sunday morning eagerly looking forward to being in the house of the Lord. Instead I was taken to the local hospital. My good health was shattered overnight. A CAT scan had revealed a brain tumor, and I became a captive in a strange land. I ceased singing my songs of praise and "hung up my harp."
Early the next morning, a young couple visited me. Joseph prayed. Janet read a letter of praise and encouragement that I had written to her six years earlier when she faced the decision of whether or not to have an abortion to save her life. (She chose to trust God and delivered a perfect baby boy!)
I was sent home for 30 days and then went back for more tests to determine the prognosis. The CAT scan indicated that the tumor was half the original size and was no longer a problem. The new diagnosis was multiple sclerosis.
Once again I was tempted to stifle my song, that is, until I discovered El Shaddai, the All-sufficient One (Jesus), who is always with us.

"ONE of my favorite people was a tiny, energetic missionary in the southern Philippines - Annetta Holsted, our language supervisor. But more than that, she was an excellent role model because of her love for the Filipinos and her devotion to prayer and the reading and memorization of Scripture.
AFTER we had completed our two years of language study, Annetta returned to the United States for a year of furlough and, in God's providence, was near enough to New York City to be on hand when we were evacuated from the Philippines for a medical emergency. BOTH our two-year-old daughter, Debbie, and my husband, Bob, (in the same year the Salk vaccine was released) had contracted polio.
AFTER the ambulance ride from the airport to the hospital, I was driven to the missionary guest house. Completely exhausted from the 36-hour trip, I turned our two other children over to my parents and started down the hall to the bedroom to get some rest. Down that hallway came Annetta. She put out her arms to me and said these words, "The LORD has given me a message for you: 'GRACE is better than healing."
AT the time, I did not realize the importance of the message and even wondered what it meant.
BUT years later when Debbie returned to the Philippines as a missionary, Annetta's words came back to me with full force. In the midst of the most difficult circumstances, it is possible to experience the full measure of GOD'S GRACE and peace in our lives, trusting Him to use our weakness to further His kingdom." We cannot even guess what it involved for Jesus to put on humanity with all its temptations, problems and weaknesses. His willingness to come to earth to save sinful humanity is inconceivable.
THERE are many times when the trials and sorrows of this life are overwhelming. Loved ones fall prey to disease and pain and death. Friends turn against each other. THOSE who once followed the Lord now have no desire for the Word or for the house of God. Life's painful burdens cause us to cry out, "O Lord, when are you coming to take us out of all of this? How could You have left heaven for this?"
The Word tells us, "For your sakes he became poor, so that you through his poverty might become rich" (2 Corinthians 8:9). JESUS left heaven and became a man! He suffered pain in His body, shed tears at the loss of a loved one, knew the hurt of being forsaken by friends and died in shame on a cross. WHY did He agree to do this? Not only so that we might have forgiveness from sin but that in time of need His loving presence would be our comfort. "His name shall be called Immanuel - God with us."
"The virgin will be with child and will give birth to a son, and they will call him Immanuel - which means, God with us (MATTHEW 1:23)."

~ CHRISTMAS Gems ! ~
"SOMEONE once said to me, "You should not have a Christmas tree in your home, for it does not honor Jesus Christ." I began to think about why we did (and still do) have a beautifully decorated and lighted tree in our home and why it was so much a part of our holiday celebration.
The treetop star reminds me of the star that guided the wisemen to Jesus (Matthew 2:2), and of Jesus Christ Himself who is the "bright and Morning Star" (Revelation 22:16). Thank you, Lord, for the Star!
The lights tell me that Jesus Christ is the "true light" (John 1:9), who came into the world to shine in our hearts to "give us the light of the knowledge of the glory of God" (2 Corinthians 4:6). Thank you, Lord, for the Light of the world who lives in my heart!
The different ornaments remind me of the ornaments with which Jesus Christ desires me, His child, to be adorned - a meek and quiet spirit (1 Peter 3:4); good works that glorify my Heavenly Father (Matthew 5:16); love, joy, peace, patience and gentleness (Galatians 5:22-23). The ornaments are prettiest when they reflect the lights that shine on them. So, too, only as I live my Christian life controlled by the Holy Spirit who lives within me, can I reflect Jesus Christ to those with whom I come in contact.
As we decorate our tree this year, I will again be reminded of the faithfulness of the star who lives within my heart, and no matter what the situation or circumstance in which I find myself, His promise in Second Corinthians 12:9 is forever true: "My grace is sufficient for you."

Returned TODAY from the previously mentioned and anticipated rest-break at Ocean Grove (haven't completely unpacked as yet). It was lovely and am feeling refreshed. Went on a couple of "touristy" outings and ate simple, nutritional meals. Admired the ducks, galahs and magpies that harmoneously wander around the beautiful garden surroundings of where I stayed.
ALMOST seven (7) days until Christmas Day - time really does fly. Have completed the expected preparations and those that I can do. Came home to an accessorised Christmas tree COMPLIMENTS from our youngest daughter. What a delight she is to have done that! "I'ts beginning to look alot like Christmas" .. I've heard those words before!!!
The ducks would now be muzzling amongst the green grass (it's been raining alot) for their food from where I've visited for the past week. It's nearing onto the darkness of night. I just love them. APPARENTLY they had arrived in the afore-mentioned garden grounds about eighteen (18) months ago and they have stayed. I know I'll think of them often."

~ God Is Enough ~
"And God is able to make all grace abound to you, so that in all things at all times, having all you need, you will abound in every good work (2 Corinthians 9:8)".
"God is enough. He is our all-suffcient One. He is able to make all things possible for us through His grace. The original word for this grace is "charis" or "free blessing." It is spontaneous and universal. So it is in God's adequacy that we fnd the provision which abounds with every blessing we need. He will keep nothing from us to fulfill His glorious purpose.
For what reason are these wonderful gifts supplied? "So that in all things at all times, having all you need, you will abound in every good work." Or, as one writer put it, you will have ample means in yourself to meet each and every good cause!
As we abound in all the lovely gifts of our Almighty God, there should be a natural overflow of grace from our lives. This overflow can touch those around us who are in need.
We need to ask God to make our service for Him more abounding. Remember, He is able to equip us with the abilities to meet the task.
Daily WAIT upon Him for His grace.
Be WILLING to be emptied of your own desires and to follow His direction for your life.
Seek WISDOM from Him for each day.

"God is enough. He is our all-suffcient One. He is able to make all things possible for us through His grace. The original word for this grace is "charis" or "free blessing." It is spontaneous and universal. So it is in God's adequacy that we fnd the provision which abounds with every blessing we need. He will keep nothing from us to fulfill His glorious purpose.
For what reason are these wonderful gifts supplied? "So that in all things at all times, having all you need, you will abound in every good work." Or, as one writer put it, you will have ample means in yourself to meet each and every good cause!
As we abound in all the lovely gifts of our Almighty God, there should be a natural overflow of grace from our lives. This overflow can touch those around us who are in need.
We need to ask God to make our service for Him more abounding. Remember, He is able to equip us with the abilities to meet the task.
Daily WAIT upon Him for His grace.
Be WILLING to be emptied of your own desires and to follow His direction for your life.
Seek WISDOM from Him for each day.

~ CONTENTMENT is gain ~
"Keep your lives free from the love of money and be content with what you have" (HEBREWS 13:5).
"AS a missionary in Burkina Faso, I was surprised to find that many Africans in our adopted country seemed contented. Paul said that contentment, when coupled with godliness, was "great gain" (1 Timothy 6:6).
As missionaries, we have hurt with the Africans through years of famine, crop failures, dry wells and dead livestock. What a test of one's faith. Often I have asked myself, How would I score? Could I pass the test?
I have observed Rebecca, a pastor's godly wife, as she cooks over an open fire, scrubs her clothes by hand and farms with a hoe. I have seen in her life a submissive, joyful acceptance of the will of God, a contentment with what she has. I marvel at her calmness in turmoil, as she supervises the 35 children under her dormitory roof. I remember her complete trust when food and money were gone. I marveled at how God's grace was her strength the day she rode in the ambulance with her sick husband. She had brought her precious Bible with her, hoping she would be able to witness to the driver during the long ride. This godly woman, so poor in this world's goods, is completely absorbed in telling those who cross her path about Jesus, her dearest Friend.
God makes these two priceless characteristics - godliness and contentment - available to each of His children. But they seem to reside only in the lives of those who are walking close to God and whose treasures are in heaven.
What would an examination of our hearts reveal? Do we desire godliness and contentment in our lives?"

~ Five (5) Ways to DIFFUSE Anger ! ~
HOW do you tell if you have an anger problem? IF more than one person close to you has said they think you have an issue, listen to them because uncontrolled anger can affect your health!
NOT all peeved people scream and throw things. Yes, some show their rage aggressively. Others are more defensive. Some are passive aggressive and won't tell you they're "ticked off". Instead, they roll their eyes, make snide remarks and are hostile.
Then there are the sulkers. Those people who withdraw when they're angry, refusing to address things but making it very clear there is a problem.
We can't rid our lives of issues and people who make our blood boil. And we shouldn't aim to blank this emotion entirely - but just learn to manage it better.
1. IDENTIFY YOUR TRIGGERS
Who or what pushes your buttons? Get to know when you're more likely to erupt; if you can tell when you're at your most vulnerable, you, can use coping strategies.
2. RIDE THE WAVE OF EMOTION
Instead of marching straight in to confront whoever has annoyed you, take some time out to allow the red-hot emotion to cool.
3. BREATHE DEEPLY
When we're angry, our heart rate and blood pressure increase and adrenalin rushes through our bodies. We can calm down by taking deep breaths with our diaphragm - not our chest.
4. CHALLENGE ANY UNHELPFUL THOUGHT
Anger can make us irrational. Recognise the times when you're catastrophising or taking things personally. Instead of thinking the world is out to get you, try having some empathy - we all make mistakes and do things differently.
5. LEARN POSITIVE WAYS TO COMMUNICATE
Pick your battles by letting some things go through to the keeper. But if it's important for you to say something, try to communicate assertively. Express your view or problem without using personal attacks and try to suggest how to improve things next time! HUMOUR can lighten the mood. - J. Lamble

IT happens to elderly people when they trust the friendly, persuasive person who comes to the door selling a too-good-to-be-true product. IT happens when a shyster tells a couple that he's from the bank, and they need to withdraw money and give it to him to fix a bank error. IT happens when a person with health problems buys hundreds of dollars' worth of bogus medicine.
It can happen to us to - in spiritual matters. We can be fooled by deceitful presentations that make guarantees far beyond what God has clearly promised. But this isn't anything new. Paul warned about this kind of deception in Colossians 2:8.
So, how do you protect yourself from those who make religious claims that God's Word does not support? By being "rooted and built up in [Christ Jesus] and established in the faith, as you have been taught" (v.7).
Whether listening to a salesperson or to a preacher, be discerning (*distinguish/insightful). Don't be fooled." - JDB

~ HONEY Yoghurt Ice Cream ~

1 cup natural yoghurt
2 tspn. lemon juice
1/2 cup orange juice
1/4 cup honey
2 egg whites
THOROUGHLY blend the yoghurt, fruit juices and honey. FREEZE until the mixture becomes mushy and then beat again until smooth. FOLD in the stiffly beaten egg whites and refreeze!
Note: THIS is a healthy alternative to traditional ice cream and can be made with low-fat yoghurt. FOLD fresh berries through with egg whites for added flavour. * CHOPPED nuts or even choc chips can also be added.

~ Be True to your Word ~
"Let your "yes" be "yes," and your "No," "No." For whatever is more than these is ... ." - Matthew 5:37
SHORTLY before his death, the Duke of Burgundy was presiding over the Cabinet Council of France. A proposal was made that would violate an existing treaty but would secure important advantages for the country. Many "good" reasons were offered to justify this action. The Duke listened in silence. When all had spoken, he closed the conference without giving approval. Placing his hand on a copy of the original agreement, he said with firmness in his voice, "Gentlemen, we have a treaty!"
It's a strong temptation these days to abandon our word in favor of personal advantage or financial gain. As believers in Christ, however, our responsibility is to remain true to our word so that our Lord is glorified.
So, when you give your word, keep it! "Let your 'Yes' be 'Yes,' and your 'No,' 'No' " (Mt. 5:37). IF you/we take on an obligation, fulfill it! Your honesty and reliability should be so evident that you can be trusted for any contract you make. If non-Christians can trust you in business matters, they will be more likely to believe you when you speak about the gospel.
When we're tempted to break a promise, let's think again of these words: "Gentlemen, we have a treaty!"

~ 'Hawaiian' LEMON Fish ~
Ingredients:
2 egg whites
1/4 cup cornflour
4 white fish fillets
2 bananas, peeled
1 cup shredded (not dessicated) coconut
1/2 cup oil (of your choice)
Lemon sauce:
1 tbspn. cornflour
1/4 cup lemon juice
1 tspn. grated lemon rind
1 tspn. grated fresh ginger
1 cup fish stock
LIGHTLY beat the egg whites and cornflour together.
Cut the fish in half lengthways and then in half across.
Dip the fish and bananas in the egg mixture, then toss
in the coconut.
Heat the oil in a large frying pan, add fish and
bananas in batches and fry until golden-brown and
crisp . To make the sauce, mix the cornflour and
lemon juice together in a small saucepan.
ADD the lemon rind, ginger and stock. STIR over
medium heat until the sauce boils and thickens.
Cook for one (1) minute. * Serve with the fish and
banana.

When the burden of it all weighs heavily, when problems seemingly have no answers, is it not sweet to hear those comforting words: "Come to me . . . I will give you rest. . . . my yoke is easy and my burden is light"?
Struggling Christian, determined to be all that God wants you to be, are you striving in your own strength? Stop the self-effort and get into the yoke with Jesus, your Savior. His yoke is easy, His burden is light. If what you are carrying is hard and heavy, then it must not be of His making.
Everything the child of God needs to live the Christian life is in Jesus. He is the reservoir of life and power. Without Him we can do nothing!

~ Apple and Fruit Jelly ~
Jelly can be made up to 2 days ahead; keep, covered, in refrigerator. Recipe unsuitable to freeze.
2 tabs. gelatine - preferably beef
4-1/2 cups apple juice
1/2 cup sweet sherry
250g. punnet strawberries, halved
1 tab. chopped fresh mint
1 large grapefruit, segmented
1 large orange, segmented
SPRINKLE gelatine over 1/4 cup of the apple juice in a small bowl, stand in small pan of simmering water, stir until dissolved; cool to room temperature. STIR gelatine-mixture into remaining combined juice and sherry.
POUR one-third of the juice into six 1-cup capacity serving dishes. ADD strawberries and mint; refrigerate until set. Pour ANOTHER one-third of juice into dishes, add grapefruit and oranges, refrigerate until set. Pour remaining juice into dishes; refrigerate until set.
DECORATE with extra mint leaves and extra strawberries, if desired.
* SERVES 6

"The United States Secret Service was founded in 1865. Their mission? To deal with counterfeiters in an attempt to protect the dollar and, as a result, America's national economy. This targeted group of law enforcement officers, however, experienced a change of direction in 1902. They became best known for protecting the President of the United States, although their charge still embodies a variety of tasks.
That change of direction in the Secret Service duties is nothing compared to the completely altered lives of the believers at Thessalonica. THEY had a spiritual transformation that turned their lives around, which was noticed by people far and wide. Paul wrote, "You turned to God from idols to serve the living and true God" (* 1 Thessalonians 1:9). And "you became examples to all in Macedonia and Achaia who believe... Your faith toward God has gone out" (vv. 7-8). The change of direction they displayed was dramatic, to say the least - abandoning the worship of idols to embrace relationship with the true and living God. And people noticed the difference in their lives.

~ Inspiration to Perspiration ! ~
My grandfathers were both gardeners and so are many of my friends. I love visiting beautiful gardens - they inspire me. They make me want to create something equally beautiful in my own yard. But I have trouble moving from the inspiration to the perspiration part of gardening. My great ideas don't spend the time and energy to make them happen.
THIS can be true in our spiritual lives as well. We can listen to the testimonies of other people and marvel at the work God is doing in their lives. We can hear uplifting music and great preaching and feel inspired to follow God more diligently. BUT soon after we walk out of church, we have trouble finding the time or making the effort to follow through.

THIS can be true in our spiritual lives as well. We can listen to the testimonies of other people and marvel at the work God is doing in their lives. We can hear uplifting music and great preaching and feel inspired to follow God more diligently. BUT soon after we walk out of church, we have trouble finding the time or making the effort to follow through.

~ Fruity BROWN Rice Salad ! ~
Serves 6.
1 can (16 ounces) fruit cocktail or 1/4 -1/2 equivalent of diced glace cherries (*your choice!)
1 cup cooked brown rice, chilled
1 tomato, diced
1 cup sliced celery
1/2 cup sliced scallions (shallots or spring onion)
2 tablespoons red wine vinegar
1 tablespoon sunflower or olive or apricot oil
1 tablespoon Djion mustard
1/2 teaspoon dried tarragon, crumbled ( * or dried herb of your choice)
1/8 teaspoon garlic powder

HAVE you ever heard skeptics say that the Christian faith is nothing more than a crutch - that the only reason people claim to trust Jesus is that they are weaklings who have to make up "religion" to get by?
Apparently those skeptics haven't heard about the doctor in one Far Eastern country who spent 2-1/2 years in jail being "re-educated" because he professed faith in Christ. THEN, after his release, he was arrested again - this time for his efforts at his church.
And perhaps those skeptics haven't heard about Paul. AFTER trusting Christ, he was arrested, flogged, mocked, and shipwrecked (2 Cor. 11: 16-29).
These believers were not looking for a crutch. No, they had something deep and essential in their hearts. They had a personal relationship with God - a relationship born of faith in the work of Jesus on the cross. As a result, they became children of the King - eager to sacrifice everything for the privilege of proclaiming Him. They were not limping along looking for something to hold them up.
A crutch? Hardly. Faith in Christ is not about safety and caution. It's about believing Jesus and trusting Him no matter what. (It's about taking up a daily cross (Luke 9:23) and living for the Savior.) - Dave Brannon.

YOU are not alone if you are still wondering whether to open your heart to the FREE offer of God's gift of salvation. Many think the offer is too good to be true. Many more are afraid they'll be obligated to somehow repay God for His gift.
Yet the decision to receive the gift of salvation is yours. The apostle John wrote: "He came to His own people, and even they rejected Him. But to all who believed Him and accepted Him, He gave the right to become children of God" (John 1:11-12).
IF you are ready to receive the greatest of all gifts, the openness of your heart is what God is looking for. You might want to sincerely use your own words, or express a prayer like this:
"Dear God, I have sinned against You. I believe that Jesus Your Son, that He died on the cross to pay the penalty for my sins, and that He rose from the dead to prove it. Now I accept Your offer of full forgiveness and eternal life. I accept Jesus as Your gift for my salvation."
IF this is the honest expression of your heart, you have entered into a personal relationship with God!
** You are encouraged to focus on true biblical values by reading/absorbing God's word from the Bible.
A church should be operated by God's word. Be wary over leaders' in that church that do NOT display/live and talk Bible-teaching (they tend to "water" it down by being lost in translation). *ALL of God's word is true as it is written in the Bible. Do NOT be distracted by luke-warm Christians in fellowship but be always wary. *DO not despair. God is on your side provided you remain faithful to Him!!
*THERE is no perfect church. IF you realise this, find a church that you believe represents Jesus Christ!
*An understanding of the Bible is of the utmost importance to learn and grow as a true-Christian.
(P.S. My Husband and I have been true-Christians' for twenty (20) years' and have together learned that information through experience. We will never stop learning.)
*We find and know that the Bible is the living word and is relevant "yesterday, today and tomorrow" (without compromise)!!

DURING World War II, it was the custom in the United States for a family who had a son serving in the military to place a star in the front window of their home. But a gold star indicated that the son had died in support of his country's cause.
Years ago, Sir Harry Lauder told a touching story about this custom. He said that one night a man was walking down a New York City street accompanied by his 5-year-old son. The little fellow was interested in the brightly lighted windows of the houses and wanted to know why some houses had a star in the window. The father explained that those families had a son fighting in the war. The child would clap his hands as he saw another star in the window and would cry out, "Look Daddy, there's another family who gave a son for his country."
AT last they came to an empty lot, and a break in the row of houses. Through the gap a star could be seen shining brightly in the sky. The little lad caught his breath, "Oh, Daddy," he cried, "Look at the star in the window of heaven! God must have given His Son too."

Somehow offering an 'appetiser' before the entree is too often reserved only for special occasions. It doesn't haven't be this way. In fact, most appetisers can be prepared in just ten (10) to fifteen (15) minutes - something that can be done while the rest of the meal is cooking!
Appetisers are a great way to put the unexpected into a meal, whether it's on a "grey" day in the depth of Winter or in the middle of a too-hectic work-week. ** IF you find cooking to be relaxing, creating a tasty appetiser can be a wonderful anecdote to a busy day.
'CHILLED BEAN DIP':
Yield: 2 cups.
1 can (16 ounces) kidney beans/preferably ORGANIC; DRAINED and RINSED ( * "crush" with back of spoon)
2 jalapeno peppers, finely chopped
1 tablespoon red wine vinegar
1 LEVEL teaspoon chilli powder

1 tablespoon minced fresh parsley
PLACE the beans, jalapeno peppers, vinegar, chilli powder, and cumin in a food processor (whisk?). Blend until smooth! Transfer the mixture to a bowl. STIR in the onion and parsley and serve.

Appreciate your informed honesty regarding the natural health regime of keeping well. It's great and 'thank you' for your continued passion on this practical life-giving subject! Was wondering if you have you heard of a current so-called subtle, REAL food political (World Health Organisation) anilhilation that has been infiltrating (apparently since WW2)?? It's called 'CODEX ALIMENTARIUS' (where all nutritious food products are subtly/slowly, definitely being corrupted until they will no longer be applicable to ordinary man - this idea is also being subtly trialled in Third World Countries. Malnutrition.). The 'CODEX ALIMENTARIUS' is a kind of treaty that has been signed by quite a few countries and hasn't been fully implemented yet.
VITAMINS are supposedly, eventually, to be exterminated from 'the shelves' ALSO. Don't know when. It's absolutely horrid to think about it.

DO you ever wonder if the Lord has forgotten you? Does it seem as if He's not paying as much attention to you as He once did? IF so, remember that appearances can be deceiving. Regardless of how it looks right now, the Lord is not far from you. He may be giving you an opportunity to trust Him and wait for His help rather than rely on your own resources.
We are all familiar with a similar kind of testing in everyday life! What parent has not told his child to stay in a certain place until he returns? And what parent is not distressed if that same child is unwilling to wait but quickly runs off on his own?
David, the author of Psalm 13, reflected the thoughts of a child of God who certainly must have pleased the heavenly Father. He was being put to the test. He knew the experience of feeling that he had been abandoned by the Lord. Yet he remained convinced that his only real hope was in God, and that He would reward his faith.
Are you being tested right now? Does God seem far away? It's your opportunity to learn what David learned - that the Lord never leaves you. * He sustains all who put their trust in Him. - Mart De Haan

** SODA BREAD !! **
2 cups wholemeal plain flour
1/3 cup water
1/3 cup milk
1/2 level teaspoon salt
1/2 level teaspoon Bicarbonate of Soda
1 level teaspoon Cream of Tartar
SIFT dry ingredients and make into a dough with the liquids. QUICKLY form round flat loaf and place on a greased baking tray. COVER loaf with a deep 6 or 7 inch cake tin, and bake in 230deg.C. (450deg.F.) oven for thirty (30) minutes. REMOVE tin and leave loaf in oven for a further 10-15 minutes to brown.

1 teaspoon bicarbonate of soda
4 egg whites
250g wholemeal S.R. flour
1 teaspoon mixed spice
COMBINE fruit, orange juice (*2 teaspoons brandy for special occasions) and honey in a saucepan. BRING to the boil. REMOVE from heat. ADD bicarb. of soda. COOL. GREASE a 20cm. round tin very lightly or line with foil (baking paper?).
HEAT oven to 325deg.F. (165 deg.C.). BEAT egg whites lightly. ADD cold pumpkin and fruit mixture and beat until smooth. STIR in flour and spice and beat until smooth. BAKE for 1-1/2 hours.
N.B. FOR a more moist cake, soak fruit in orange juice overnight!
