2 oranges, peeled and segmented
1/2 cabbage, finely shredded
1 green pepper, finely sliced
1 red pepper, finely sliced
2 teaspoons lemon juice
1/2 teaspoon grated lemon rind
1 cup mayonnaise (*see this blog for recipe)
COMBINE all the ingredients in a large bowl and chill well (*about 2 hours) before serving!
