~ LOW-fat HIGH flavour GRILLED Yoghurt-Lemon Chicken !! ~

Serves 10.

2 cups plain low-fat yoghurt
1/3 cup vinegar
2 tablespoons lemon juice
2 cloves garlic, minced
2 teaspoons coriander seeds, crushed
1/4 teaspoon ground cloves
8 drops of Tabasco sauce
1/2 teaspoon pepper
1 teaspoon dry mustard
1/2 teaspoon ground ginger
5 pounds chicken pieces, skinned

In a large bowl, mix together all the ingredients except the chicken. ADD the chicken, turn to coat, cover, and refrigerate overnight!

PREHEAT oven to 325deg.F. TRANSFER the chicken to a baking dish. BAKE, basting every 30 minutes with pan juices, until the juices run clear when the chicken pieces are pierced, 2 to 2-1/2 hours. (ALTERNATIVELY, cook over medium-hot coals, turning and basting every 15 minutes, for 2 to 2-1/2 hours.)
