Serves 6.
1 tablespoon butter
1 cup raw (light brown) sugar
2 eggs, well beaten
1 teaspoon baking soda
1 cup non-fat buttermilk
2 cups all-purpose flour
pinch sea salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1 cup raisins or craisins
PREHEAT oven to 350deg.F.
In a bowl, cream together the butter; gradually adding the sugar. ADD the eggs and mix thoroughly. DISSOLVE the baking soda in the buttermilk, and stir into the sugar-egg mixture. IN a bowl, sift together the flour, salt and spices. Beat the flour mixture into the sugar mixture. Fold in the raisins or craisins. POUR the batter into an 8-inch square or round pan. BAKE until a thin knife or cooking skewer comes out clean, about 1 hour. Cool on rack.
