MAKES 12.
1 cup Wholemeal flour.
1 small Banana mashed.
Squeeze of Lemon juice.
1 teaspoon grated Lemon rind.
Enough low-fat milk to make a dropping consistency batter.
(VERY light sprinkling of Raw sugar or Stevia, if desired.)
COMBINE all ingredients and stir in milk. HEAT a non-stick skillet (*or preheat with a pre-cut piece of Baking Paper lightly sprayed with Olive Oil having already been inserted into the base of the skillet/frypan - this is also good for when the non-stick surface has been scratched!) and drop spoonfuls of the mixture onto it. AS bubbles appear on top of each Pikelet, turn over so the bottoms are brown. REMOVE from Pan and continue until all the mixture is used. SERVE topped with slices of Banana drizzled with Lemon juice to prevent them turning brown/oxidising. (VERY light sprinkle of Stevia or Raw sugar, if desired. Serve immediately!) J. Stafford
