FATS and SUGARS come under many names.
FATS may be found as:
- Shortening.
- Vegetable oil.
- Lecithin.
- Lard.
- Animal fats.
- Nuts and seeds.
* SUGARS include both Cane sugar (sucrose), which may be added in cooking; and sugars which occur in foods e.g. fructose in fruit or lactose in Milk.
SUGARS may be listed as:
- Sugar.
- Raw sugar.
- Glucose.
- Fructose.
- Lactose.
- Maltose.
- Brown sugar.
- Caramel.
- Honey.
- Treacle.
- Golden syrup.
- Maple syrup.
- Corn syrup.
- Concentrated fruit juice e.g. apple or pear juice.
- Fruit puree.

* Sorbitol and Isomalt are artificial sweeteners, which supply little usable Sugar content, but contain the same energy value (kilojoules) as does Sugar.
* NO added sugars - contains no added sugar of any type (glucose, maltose, honey, malt, malt extract, fructose, sucrose, lactose), but may contain natural lactose, fructose, sucrose.
