** PUMPKIN Fritters !! **

SERVES: 4.

8 slices Pumpkin (approximately 2cm. thick).

Batter:

1 cup Wholemeal flour.
1 teaspoon Curry powder.
1 teaspoon Paprika.
1 cup skim OR low-fat (*Zymil or 'Liddell's' - LACTASE included Milk; AUSTRALIA).
2 Egg whites.
Wholemeal breadcrumbs and Sesame seeds.

* Par-boil Pumpkin slices to tenderise slightly. DRAIN on toweling-paper. MIX together all the Batter ingredients. DIP Pumpkin slices into Batter and then press into Breadcrumbs and Sesame seed mixture. COOK in a non-stick Pan until Crumb mixture is golden-brown. TURN and repeat on the other side.

SERVED with Salad, this is an excellent dish for a quick Lunch.

* PUMPKIN, baked with Sesame seeds *

CUT Pumpkin into serving pieces. STEAM Pumpkin in Water until just tender, then brush the tops of pieces of Pumpkin with natural Yoghurt and sprinkle with Sesame seeds.
COOK until Pumpkin is tender and Sesame seeds golden.



P.S: PUMPKIN comes in many shapes and sizes. IT contains alot of Moisture, so it isn't necessary to add alot of Water in its Cooking process! (J. Stafford)
