* These 'Spreads' are a substitute for artificially coloured, sugar-loaded jams commercially available !
APPLE SPREAD
220g. dried Apples.
3 cups unsweetened Pineapple juice.
1/2 Lemon.
2 teaspoons Lemon rind.
2 teaspoons Cinnamon.
Combine all ingredients in a large Saucepan and simmer over gentle heat until Apples are soft. Puree the mixture in a Blender and pour into sterilised Jars. When cool, seal and store in the Refrigerator.
PLUM SPREAD
1kg. Plums.
4 cups Orange juice.
Rind of 1 Orange finely grated.
Place all ingredients in a Saucepan and slowly bring to the boil. Let simmer on gentle heat until liquid has reduced and Plums are quite mushy. Remove stones, mash pulp with a Potato-masher. Pour into sterilised Jars and seal when cooked.
STRAWBERRY SPREAD
4 'Granny Smith' Apples
250g. Strawberries.
2 cups unsweetened Orange juice.
1/2 - 1 teaspoon Cinnamon.
Rind of 1 Orange (optional).
Peel and core Apples. Slice finely or grate and place in Saucepan. Wash and hull Strawberries and add to Apples. ADD Orange juice, Cinnamon and Orange rind. Slowly bring to the boil and gently boil for approximately forty (40) minutes or until liquid and fruit become thick. Pour into sterilised Jars. Cool and seal. Once the Seal is opened, the Strawberry jam should be kept Refrigerated. (J. Stafford)
