* EASY NO-Spice LENTIL Dahl !! *

* SERVES: 4.
* COOKING time: Twenty (20) minutes.

1 Clove of Garlic, crushed.
1 Medium Potato, diced.
1/2 SWEET Potato, diced.
200g. Pumpkin, diced.
1 x 420g. can of diced Tomatoes.
185g. Red Lentils.
3 cups Water.
1 cup natural Yoghurt, or 1 Avocado, sliced.
1/2 cup Coriander leaves.
4 serves cooked Brown Rice.

1. RESERVING some Coriander for garnish, place all ingredients except the Rice and Yoghurt (or Avocado) into a large Saucepan.

2. BRING to the boil, reduce heat and simmer for twenty (20) minutes or until Vegetables are cooked.

3. SERVE on a bed of Brown Rice, and top with either natural Yoghurt or Avocado slices. GARNISH with Coriander leaves, to taste.
